I'd like to replace the plugs, so if you had some experience with this project, please post any insights, tips, cautions, surprises, etc. Should I plan to remove a ton of stuff, or did you find a way to sneak around some of the stuff around the coils?

The 4.6l 2v modular engine is not difficult to remove spark plugs. (As compared to the 5.4l 3v modular engine of that same year)

Remove coils.
I believe it is a 7mm bolt. Then disconnect wiring to coil and remove coil gently.

Remove spark plug
Depending on how long the spark plug has been in there and know that it is a steel plug in an alloy head.
Get a deep 5/8" socket or spark plug socket, with an extension that works to engaged to the spark plug. (May actually be metric)
Spin out the spark plug several turns, then screw in one turn.
Repeat until spark plug comes out or the spark plug can be removed with hand pressure.

When installing new spark plugs, chemicals are desired.
Dielectric grease - a small dap inside the boot on the coil, before installing the coils.
Very high temp anti-seize - a very small dap around the mating bevel on the plug. Where the plug contacts the head. Keep this stuff off of the threads.

Action

Be gentle with the harness connectors on the coils. If you break the plastic latch you need to secure the connector to the coils with a small zip tie. Use a bit of dielectric grass on the pins and connector boot.

Another small but useful tip. After removing the coil and before removing the plug, use compressed air (if you have an air compressor handy) to blow any debris out of the spark plug hole. There may be junk/dirt in the hole that doesn't need to fall into the open cylinder, once the plug is removed.

I also found that "wobble" extensions are useful, especially on the right rear cylinder. Add some universal joints, too. It's a fairly easy job, good luck.
