working on my 02 LS sport 3.9 noticing white steamy smoke from back of engine

someone told me its condensation from the cats and head gaskets /heads are never the culprit …. ive had my experience changing the secondary cam tensioners needed or not and cam cover issues where I have to go back in and re seat those stubborn little gromets currently im confused one day its steam white smoke then and now more prevalent darker smoke maybe someone can clue me in if its even possible to change out the head gaskets or produce some links for getting the ls tight for a road trip ...it ran great the day I bought it like a Lincoln smooth and this version of Lincoln a little throaty and unusually fast for a sedan ...now its like im trying to find a high spot in a cylinder and my Lincoln is loosing its repour
